Zucchini Pancakes

Yum, zucchini, get in my tum!

So if you are a regular on Cocobutton you'll know that I (more often than not) shy away from meat. I am obsessed with vegetables. And zucchini has, and will always be one of my favorite. You can dice them, slice them, ribbon them, even make them into strings for 'pasta' with salads and sauces. 

These little (marrow)  babies are high in vitamin C, they prevent colon cancer, they also contain powerful antioxidant properties and they promote anti-inflammatory properties that prevent heart disease. Amazing! Here is a recipe for you to use up some of that left over Zucchini;


INGREDIENTS
  • 2 cups grated zucchini not peeled and squeezed dry with a kitchen towel (this might go green, sorry)
  • 1/4 tsp. lemon juice
  • 1 Tbsp. minced garlic
  • 1/4 cup chopped onion
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1 egg
  • 1/2 cup Parmesan cheese
  • 3/4 cup flour (I use gluten-free whole wheat… health freak over here!)
  • Olive oil for frying.


INSTRUCTIONS

In a large bowl stir grated zucchini, lemon juice, garlic, onion, salt, pepper and egg with a wooden spoon. 
Add in Parmesan Cheese and flour and stir to combine. You do not want to beat this mixture. It can be over beaten and effect the outcome of the batter. Now the mixture might seep a little while you are cooking, rather move the mixture up the side of the bowl and let the liquid remain. This is due to the lemon and the zucchini, not to worry! 
Place some batter, about a tablespoon size, into medium hot oil and lightly spread out from the center with a spoon. Cook slowly for about 3 minutes or until lightly browned and sealed enough that you can flip it over with a spatular and cook remaining side until it is lightly browned and cooked through. Remember, cook with love!! 

Serve warm plain as a starter or with avocado and tomatoes, they are so moreish make sure you make enough!

Just love, hold hands, touch, sniff nice things. 


When you sit back down at your desk on Monday morning and feel relief you know you've had a bit of an odd weekend. From Friday to Monday I really didn't imagine I'd have this feeling. I normally feel quite depressed to be back at work. I guess too much anticipation is a bad thing! Remind me never to do that again, *wink! This is what I learned; 
  • Friday migraines are no joke, no fun and have quite a domino affect on the rest of the weekend, bother.
  • Buying a big leather couch is quite epic. My first big buy for my cottage is officially paid for in full and is on the delivery truck on its way to Coco's Cottage, hells bells I am excited… more so that I don't have to visit @home to go and sit on the sister couch to just remind myself that I have bought it. Yay!
  • "Turn my eyes from looking at worthless things; and give me life in your ways." - Psalm 119:37 
  • I am blessed to have beautiful friends. Spending time with them is both rare and precious to me. 
  • 'Vegetables' a book by James Peterson made for a lovely Birthday gift. You know a gift is a good gift when you want to keep it for yourself.

  • Admire without jealously, praise without flattery, follow without imitating, and lead without manipulating. 
  • I can timidly say I have tried all three Frozen Yoghurt places in Jozi. These are; Wakaberry, Smooch and on Sunday I finally completed the trio with Filo. I must say Smooch is my favourite. Wakaberry is nice but a little bland and on the boring flavour side and Filo is ridiculously sweet and too runny. Smooch, you get Coco's kisses, especially your peanut and salted caramel mix, divine!

me, myself, and us, it's love.

I've never known anything more ridiculous than that scene in Winnie the Pooh where he gets stuck half way in, half way out of Rabbits house. He naturally gets stuck because he's had too much honey, too much of a good thing. That’s not the part I find ridiculous though, that part is the part where Rabbit tries to deal with the 'situation' by painting Pooh's butt and adorning it with vases and flowers, a shelf some antlers (naturally) and I think perhaps a pipe... Obviously Rabbit is pleased with the solution. I always find after a big happy weekend of drinking and partying I feel like I look and feel like Poohs butt. I am adorned with a painted on smile and some other interesting things I have collected along the way, some new friends, a couple of masks, a can of appetizer in this case and of course I feel slightly half way in but half way out because some of the weekend is a bit of a blur. Best. This is what I learned;

  • I can proudly say I completed the 30 day Green Smoothie Challenge. Yup I did it, everyday for 30 days I drank over 750 mls of raw smoothie and it shows! The results speak for themselves, energy, smoother skin and a brighter smile are just a few of the pro's. You should give it a go, it is not as easy as it seems, trust me!
  • I have retained some amazing friends from Vega. It is amazing to think that after only two short years I thought all I obtained was a degree but lately I have come to the realization that it was the biggest stepping stone to the beginning of the rest of my life. Thank god I took the leap!
  • She was like the moon, part of her was always hidden.
  • The mystery of the Almond Butter thief at the Blubird Dischem has eluded me! Well… he / she is not a thief just a greedy aloof Almond Butter glutton! How very dare you take ALL the Almond Butter and leave poor little Coco with none… the mystery is A) What will you achieve with all the deliciousness and B) how do you afford it at R89 a pop. I dislike you a lot… and I dislike you even more that you might have hit the Sandton one too… anyone know where I can get me some ALMOND BUTTER!!!??
  • I went to a club on Saturday night… this quote; "Young girls need to learn that sexiness isn't about being naked." - Marc Jacobs
  • You know you're in love when you look back on your Sunday morning and remember only that you spent the morning lying in bed laughing at and with each other… perfection.
  • Nefelibata (n.) lit "cloud-walker"; one who lives in the clouds of their own imagination or dreams, or one who does not obey the conventions of society, literature, or art.
  • There is nothing more divine than lying in the sun with my beautiful boys, Louis and Basil (my handsome Pekingese's) counting my blessing, a perfect ending to the weekend.

Swans, Lauren Withrow and making changes, or just painting yourself another colour.
When you spend the weekend being sober and squeezing every waking hour of the weekend doing something constructive you really get one hell of a lengthy weekend. Don’t get me wrong I would love a twelve day weekend but two days might actually be enough.
  • The more I detox the more I hate alcohol. Drunk people, I only want to be around my own drunk people, stranger drunks are just annoying. My drunk people are gorgeous! Giggle!
  • If only closed minds came with closed mouths.
  • I am leaning more and more towards vegetarian, I don’t know what is happening to me either.
  • Dancing my sober ass off at Movida for my favourite January babies birthdays is one hell of a workout and a lot of fun.
  • I’ve realised that sleeping soundly is often all in the mattress. If I do not like the mattress I probably wont catch a wink... All I want to do is sleeeep.
  • Doubleshot Coffee in town on Juta Street has amazing coffee, its a really great location and has an amazing taste. Sippy sippy.
  • Running in the morning is one thing. Running in the morning with sore feet from dancing the night before is another. Running with both these thing and anger AND uphill is an entire form or self punishment... I’m feeling it today... Ouch!
  • It surprises me when I see people I used to know a long time ago and how they have grown and changed and how beautiful they have become. I am surrounded by swans.
  • I’m loving the dark romantic photography of Lauren Withrow. Portfolio two is definitely my favourite. Check it out.
  • There are often days when I wish I could wear a “do not disturb” round my neck. Specifically Sundays.
  • I found myself doodling on this specific Sunday... Art is the solution to chaos.
  • If you’re feeling blue try painting yourself a different colour.
  • “She stood in the storm, and when the wind did not blow her way, she adjusted her sails.” Elizabeth Edwards. I am in love with this... I am adjusting my sails.
